Creamy Pomegranate & Mushroom Chicken

This is one of my favorite dishes to make when I have guests over. Everyone always loves this Creamy Pomegranate & Mushroom Chicken and it is simple to make. The key to this recipe is using an ovenproof pan, if you have an enamel coated cast iron pan, this is the perfect time to use it.

Serves 2-3

Ingredients:
2 chicken breast, skin on
2 tablespoons olive oil
3 tablespoons butter
1/2 medium white onion, dice
1/2oz fresh sage, chopped
3oz golden Shitake mushrooms
8oz pomegranate arils
1 cup pomegranate juice
2 cups heavy cream
salt & pepper


Directions:

1. Preheat oven to 350°F/177°C. Season chicken generously with salt and pepper.

2. In an oven proof pan heat olive oil and butter over medium heat.

2. Starting with the skin side down, brown chicken 8 minutes on each side. Remove from pan.

3. Add onion and sage to pan, stir to mix together. Place chicken on top of this mixture. Cook in oven for 15 minutes.

4. In a measuring cup stir pomegranate juice and heavy cream together.

5. Add mushrooms, pomegranate arils, and juice mixture to the pan. Bake for 15-20 minutes. Serve.
