  1. Preheat oven to 375˚F/190˚C. Slice Italian loaf and into 1/2” cubes, toss with olive oil, kosher salt and fresh crackled black pepper. Place on baking sheet and bake for 5 minutes, turn croutons and bake for an additional 5 minutes or until golden brown.
  2. Rinse, dry and chop the kale and romaine into bite-sized pieces. Place in a large serving bowl and sprinkle generously with shredded parmesan cheese and croutons.
  3. In the small bowl whisk together mayonnaise, Parmigiano-Reggiano, fresh lemon juice, anchovy paste, dijon mustard, Worcestershire sauce, garlic, kosher salt, and fresh cracked black pepper until combined. (If you have any left over Caesar dressing store it in an airtight container in the refrigerator for up to 2 weeks.)
  4. Drizzle Caesar dressing over salad and toss gently until kale and lettuce are evenly coated. Add a dash of fresh crackled pepper and serve.
