Breakfast Sliders with Thick-Cut Bacon, Cheesy Eggs & Chipotle Aioli are the perfect start to #SliderSunday. King’s Hawaiian Sweet Hawaiian Rolls are toasted to perfection, covered in a delicious homemade chipotle aioli and topped with thick-cut oven roasted bacon, cheesy scrambled eggs, and ripe hass avocado.


Breakfast Sliders

Serves 6 - 2 sliders each 1

Prep Time 7 minutes

Cook Time 25 minutes

Ingredients:
1 - 12 pack of King’s Hawaiian - Hawaiian Sweet Rolls
8 slices thick-cut applewood smoked bacon
10 large eggs
3 tablespoons unsalted butter, divided
1/4 cup water
1/8 teaspoon kosher salt
1/8 teaspoon black pepper
5 oz mild cheddar, shredded*
1 hass avocado, sliced

Chipotle Aioli Ingredients:
1/2 cup mayonnaise (Best Foods or Hellman’s)
2 tablespoons lemon juice
1/2 teaspoon chipotle powder

Instructions:

1.  Preheat oven to 375ºF. Place bacon on an aluminum foil lined baking sheet. Bake for 15-20 minutes, or until bacon has reached desired crispiness. Remove from pan and place on a papertowel lined plate to allow for excess grease to drain.

2. Using a bread knife or large serrated knife, slice sweet Hawaiian rolls in half. Melt 1 tablespoon butter over medium-low heat in a frying pan (pan should be large enough so the rolls can lay flat). Add half of sweets rolls to pan, cut side down in the butter, toasting rolls until golden brown. Remove from pan. Repeat with remaining sweet rolls.

3. In a medium sized bowl crack all eggs. Whisk until whites and yolks are fully combined. Add water, kosher salt, and black pepper. Melt remaining 1 tablespoon unsalted butter to frying pan over medium high heat. Add egg mixture into pan. Using a silicon spatula move eggs around continuously in order for small egg curds to form. Once eggs are almost set add cheddar cheese to top of eggs.

4. On the bottom sheet of sweet Hawaiian rolls layer egg, bacon, and avocado. Add generous amount of Chipotle Aioli to the top sheet of sweet Hawaiian rolls. Place top sheet of buns on bottom. Slice and serve.

Chipotle Aioli Instructions:

1.  In a small bowl, combine mayonnaise, lemon juice, and chipotle powder using a small silicone spatula.

2. Use for recipe, any extra store in an airtight container in fridge for up to one week.

Pro tip:

*Purchasing cheese in a block and shredding it yourself will 1. save you money, 2. give you a smoother cheese when you melt it, and 3. help you avoid unwanted additives such as anti-caking agents which are made from starches, enzymes, and cellulose which can be a byproduct of lumber mills.
