Chicken, Orzo & Artichoke One Pot Meal
Chicken, orzo and artichokes is an all in one dinner that is great as a stand alone dish or the center of a great meal with friends.
2 pounds chicken thighs - skin on, bone in
3 tablespoons olive oil
2 tablespoons butter
3 fresh cloves garlic - minced
3 lemons, two sliced, one zested and juiced
1/2 cup white wine
1 cup orzo pasta
1 - 11 oz can artichokes quartered - rinsed and drained
2 1/2 cups low sodium chicken broth
Fresh parsley or dill for garnish
Season chicken generously with salt. Heat skillet over medium high heat add olive oil. Cook chicken skin side down first for 4 minutes, flip and cook other side for 5 minutes. Remove chicken from pan. Melt butter in pan. Add garlic, add lemons (if frozen wait until garlic has melted to add lemons). Remove lemons. Add wine, to deglaze pan. Add orzo, lemon juice, artichokes. Cook for 1-2 minutes until toasted. Add chicken stock. Bring to boil. Remove from heat. Add chicken. Add lemons. Bake for 15 min at 400 degrees.
Garnish with lemon zest and fresh herbs
