Earl Grey & Blueberry Scones

Earl Grey & Blueberry scones are a delicious way to start your morning or an amazing treat alongside your afternoon cup of tea. These scones are super fun to make and require just a little bit of patience*.

Serves 8

Ingredients:
2 cups all-purpose flour
4.25 oz earl grey tea, approximately 3 tea bags
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup heavy whipping cream
1 egg
2 teaspoons vanilla extract
1/2 cup unsalted butter, frozen
1/2 cup blueberries
2 tablespoons heavy whipping cream


Directions:

1.  Preheat oven to 400°F/204°C. 

2.  In a medium sized bowl combine flour, earl grey tea (cut open tea bags and dump loose tea into bowl), granulated sugar, baking powder, and salt. Whisk to combine.

3. In a small bowl whisk together heavy whipping cream, egg, and vanilla extract until completely combined.

4. Using a large grater, grate frozen butter into dry ingredients. Use a pastry cutter or your fingers to combine butter into dry ingredients until small pea sized balls of dough form.

5. Add wet ingredients and blueberries to dry ingredients. Stir to combine. Refrigerate for 15 minutes*.

6. On a lightly floured surface place dough, form dough into a disk shape. Using a knife or a bench scraper cut scones into 8 even pieces.

7. Place scones on a parchment lined baking sheet. Brush scones with remaining heavy whipping cream. Bake for 20-25 minutes until golden brown. Enjoy.

Pro Tip:

*Resting your dough makes for taller scones with well defined edges. Do you have to chill your dough for 15 minutes? No, you don’t. If you do, will your scones look like you picked them up at a bakery? Yes, they will. Chill the dough and take that 15 minutes to clean your kitchen, have a glass of wine, stalk the participants of the bachelorette, or book yourself a flight while you self-quarantine from the Corona virus.
