Falafel Waffle

If you don’t want to turn on the stove, or the oven, these Falafel Waffles are the perfect dish for you. This is a super convenient meal to whip up during the day when your friends come over and impromptu crash your patio with a case of spiked sparkling waters (not going to name names here, LOL). When they text you and tell you they are on their way have them grab a few of the fresh ingredients and you’ll be set. 

Ingredients:
3 cloves garlic
2 cups canned chickpeas
30g flat leaf parsley*
20g cilantro*
1 1/2 tablespoons ground cumin
1 1/2 teaspoon salt
1 teaspoon black pepper
2 tablespoons of lemon zest
3 tablespoons freshly squeezed lemon juice
2/3 cup flour**
1/4 cup water
cooking spray

Toppings:
feta
hummus
tzatziki, yogurt dip

Greek Salsa:
1 medium red onion, medium diced
1 english cucumber, halved and sliced
10 oz cherry tomatoes, halved
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon black pepper

Directions:

  1. In a food processor mince garlic. Add the chickpeas, herbs, cumin, salt, pepper, lemon zest and juice. Pulse until the chickpeas are roughly minced, but not liquid (be careful not to make hummus, I’ve done it a time or two). 

  2. Transfer mixture to a bowl and add flour and mix well. 

  3. Heat your waffle iron. If yours has settings, heat it to medium high, however; if you have a waffle maker that doesn’t have settings just send it.

  4. Add the water a little at a time until the mixture holds together well when pressed. 

  5. Spray your waffle iron with cooking spray. Portion your falafel dough into four even balls ( make sure you wet your hand before your roll your dough into balls). Slightly flatten into a disk. 

  6. Cook the falafel approximately 7 minutes, until the waffle is golden brown and crisp.

  7. As the falafel waffles cook combine all of the ingredients for the Greek Salsa.

  8. Remove from waffle iron, top with hummus, Greek Salsa and tzatziki. Serve and enjoy.

Pro Tip:

* I like to weigh my herbs because I believe it is the most accurate way to ensure my recipe comes out the same consistently. There are a few great places that share this belief and also recommend scales, that are cost effective for at home use. 

**If you are gluten intolerant you can substitute flour for chickpea/garbanzo flour, however; the waffles will not get as fluffy and will be a little drier.
