Kale Avocado Caesar Salad with Homemade Caesar Dressing

Kale Avocado Caesar Salad with Homemade Caesar Dressing

Serves 4-6

Cook Time 10 minutes

Ingredients:
1 head of lacinato kale*
1 head of romaine
1/2 loaf Italian bread
2 tablespoons olive oil
1 teaspoon kosher salt
1 teaspoon fresh cracked black pepper
1/2 cup of Parmigiano-Reggiano
1 ripe hass avocado

Caesar Dressing Ingredients:
1 cup mayonnaise (Hellmann’s or Best Food)
1/2 cup Parmigiano-Reggiano, grated
4 tablespoons fresh lemon juice
1 teaspoon anchovy paste
1 teaspoon dijon mustard
1 teaspoon Worcestershire sauce
3 cloves garlic, minced
1 teaspoon kosher salt
1 teaspoon fresh cracked black pepper

Instructions:

1. Preheat oven to 375˚F/190˚C. Slice Italian loaf and into 1/2” cubes, toss with olive oil, kosher salt and fresh cracked black pepper. Place on baking sheet and bake for 5 minutes, turn croutons and bake for an additional 5 minutes or until golden brown.

2.  Rinse, dry and chop the kale and romaine into bite-sized pieces. Place in a large serving bowl and sprinkle generously with shredded parmesan cheese and croutons.

3. In the small bowl whisk together mayonnaise, Parmigiano-Reggiano, fresh lemon juice, anchovy paste, dijon mustard, Worcestershire sauce, garlic, kosher salt, and fresh cracked black pepper until combined. (If you have any left over Caesar dressing store it in an airtight container in the refrigerator for up to 2 weeks.)

4. Drizzle Caesar dressing over salad and toss gently until kale and lettuce are evenly coated. Add a dash of fresh crackled pepper and serve.
