Winter Fruit Salad - Hungry Twenties
 
 

Winter Fruit Salad is the final dish on my Christmas Brunch menu this year. This fruit is packed with seasonal kiwis, delicious dragon fruit, and pomegranate that set it apart from your average dish. Serving this along side my Christmas Morning Spritz, Sheet Pan Hash Browns, and Croissant French Toast is a guaranteed win for Christmas morning.


Serves 6

Prep Time 10 min

Ingredients:
8 kiwis*
1 dragon fruit
1 lb strawberries
4 oz pomegranate arils
mint

Directions:

1. Rinse and dry all fruit.

2. Peel kiwis and dragon fruit.

3. Cut kiwis in half and then in quarter-inch slices; cut dragon fruit into half-inch cubes; cut the tops off the strawberries and then into quarters.

4. Combine the cut fruits with the pomegranate arils in a large bowl.

5. Garnish with a few sprigs of mint.

Pro Tip: Kiwi’s are in season from Fall to Spring making Winter the peak of their freshness. Do not be intimidated by them, a quick peel and slice makes them perfect for fruit salads, a snack, desserts or even better freeze for smoothie bowls.
