Oatmeal Butterscotch Cookie Bars are the perfect blend of oatmeal and delicious butterscotch. These were a happy accident in my kitchen this weekend and I have to say I love the way they turned out. My least favorite part of baking cookies is only being able to bake a few at a time so you end up spending hours at the oven changing trays. That is why oatmeal butterscotch cookie bars are here to save the day; one sheet and done.

Ingredients:
1 cup unsalted butter, room temperature
2/3 cup light brown sugar, packed
2/3 cup granulated sugar
2 eggs
2 teaspoons vanilla extract
2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon kosher salt
2 cups thick oats
1 3/4 cup butterscotch chips
Maldon salt

Directions:

1. Preheat oven to 375°F/190°C. In a stand mixing bowl add butter, light brown sugar, and granulated sugar. Beat on medium speed until butter and sugars are creamed together.

2. Add one egg in, mixing on medium speed until combined. Repeat with second egg and vanilla extract.

3. In a medium size bowl add flour, baking soda, and kosher salt. Whisk to combine.

4. On low speed, gradually add flour mixture to wet ingredients mixing until combined.

5. Gently stir in oats and butterscotch chips until fully combined.

6. On a parchment lined baking sheet sprayed with cooking spray; dollop tablespoon sized cookie dough . There will be spots in between the dollops of cookie dough, that is perfect. You do not need to smooth out the dough, it will smooth out naturally as it bakes.

7. Bake for 12-15 minutes, or until golden brown. Top with a generous sprinkle of Maldon salt while they are still hot.

8. Cool for 5-8 minutes before you slice and serve.

Pro Tip: Not all salt is created equally. These cookie bars are finished with a “flake” Maldon salt to give you that extra crunch when you take bite.
