Apple Cider Vinaigrette Chicken Salad is my favorite quick Fall dinner. This simple chicken salad is elevated with fresh red onions and apples, combined with delicious glazed pecans and Gorgonzola cheese, and is completed with a fresh apple cider vinaigrette. The best part of this recipe is using rotisserie chicken which means you do not have to turn your oven on. This is also a great salad to meal prep for lunch the next day (just keep the dressing on the side).

Prep Time 15 min

Apple Cider Vinaigrette Ingredients:
8 tablespoons apple cider vinegar with mother
2 tablespoons olive oil
1 1/2 teaspoons honey
1/4 teaspoon kosher salt

Salad Ingredients:
5 oz mixed greens with fresh herbs
2 rotisserie chicken breasts, sliced
1 green apple, diced or sliced
1/2 medium red onion, diced
1/2 cup glazed pecans
4oz Gorgonzola*

Apple Cider Vinaigrette Directions:

1. In a small bowl or jar combine apple cider vinegar, olive oil, honey, and kosher salt .

2. Whisk, or shake, vigorously until combined.

3. Store in the fridge for up to a week, and whisk/shake before serving each time.

Salad Directions:

1. Add mixed greens to a large bowl.

2. Top with chicken breast, green apple, red onion, pecans, and gorgonzola.

3. Drizzle salad dressing over the top, remember less is more, so don’t add it all at once. Add a little mix and add more as needed.
